Grilled Salmon With Peach & Avocado


  • olive oil spray
  • 2 peaches, halved, stones removed
  • 2 salmon fillets (150g each)
  • 50g baby rocket
  • 1 avocado, sliced
  • ½ small red onion, thinly sliced
  • 1 Lebanese cucumber, sliced diagonally
  • ½ small red onion, thinly sliced
  • 1-2 small red chillis, sliced
  • 2 tbs fresh lime juice 


1. Preheat chargrill on medium-high heat. Spray cut side of peaches with olive oil and cook for 1-2 minutes each side until lightly charred. Slice into thin wedges.
2. Season salmon to taste. Cook skin-side down for 4 minutes. Turn and cook other side for 2-3 minutes, or until done to your liking. Set aside to cool for 1 minute.
3. Arrange rocket, peaches, avocado, cucumber, onion and chilli onto plates. Top with salmon and season to taste. Drizzle with lime juice, to serve.
