Coconut Poached Fish


  • 400ml can coconut milk
  • 4 kaffir lime leaves
  • 1 lime, zested, juiced
  • 1 tbs fish sauce
  • 1 tbs brown sugar
  • 2 red chillies, sliced (optional)
  • 1 garlic clove, crushed
  • 4 x 140g pieces basa or salmon fillets
  • 250g snow peas, trimmed
  • steamed rice, to serve
  • shredded spring onion, to serve
  • coriander, to serve 


1. Combine coconut milk, kaffir leaves, lime zest and juice, fish sauce, sugar, chilli and garlic in a large frying pan or wok over medium-high heat and bring to the boil.
2. Add fish and reduce heat to low. Cover and simmer gently for 8-10 minutes, depending on thickness of fish (it should flake easily when tested with a fork).
3. Add snow peas to poaching liquid and simmer for 2 minutes. Serve fish and snow peas on a bed of rice. Spoon over some of the liquid and top with spring onion and coriander.
